How to Roast Pumpkin Seeds

Fall is the start of the holiday season, and it is a beautiful time of year. The leaves are changing color, the air is crisp and the pumpkins and scarecrows decorate homes and stores. Many of you will soon be baking or carving Jack O Lanterns, and may be wondering how to roast pumpkin seeds so you don't waste these little marvels of nutrition. Pumpkin seeds are full of nutrients, like Omega 3 fats, cancer fighting cucurbitace, and cholesterol lowering phytosterols. They also are a great source of magnesium, manganese, phosphorus, iron and zinc. But let's face it - we mainly eat them because they are delicious! Since they don't trigger allergins, they also make a great snack for school or the workplace.

I must admit that I was dissapointed with the yield from our first pumpkin - the seeds barely had time to cool before they were all gone! Pumpkin seeds are available all year round and can be ordered online. They are most nutritious raw, but can be bought roasted/seasoned. Add them to lunches, salads, bread mixes, muffins, cereals and cooked veggies. You can also grind them up to add to salad dressings, oatmeal, ground beef or turkey.

Trick or Treat Halloween Bags

I love halloween, but the treats play tricks with my weight. I have found treats that kids love which are allergy safe, have no calories, no sugar,and leftovers can be kept for next year! My secret? I simply give out halloween toys for kids in their trick or treat bags.

Halloween toys are now available through discount stores, dollar stores and novelty companies. Halloween toys include bouncy balls that look like eyeballs; monster finger puppets; spinning spider tops, stretchy insects, etc. There are also toys for school, like Halloween pencils, erasers and pencil toppers decorated with witches, ghosts, ghouls, pumpkins, black cats and candy corn. I really like the craft items which kids can decorate themselves. Craft items can include Halloween wood shapes, coloring books, stampers, stencils and putty.

Novelties can cost as little as 5 cents, with most averaging 15-20 cents. Therefore, it is not any more expensive to buy toys than candy. Halloween toys are perfect for school, especially the pencils and erasers, since they pose no threat to children with allergies. Toys are also safer than candy since kids do not eat them and there is no worry of pills or razor blades being inserted into a pencil or bouncy ball.

Best of all, toys can be stored for the next Halloween if you buy too much. In fact, you can take advantage of after Halloween sales to store up on items for next year. If you are making Halloween trick or treat bags, or party favor bags, you can always add in a piece or two of candy for tradition. Giving Halloween toys does cut down on the calories and sugar kids consume. In an age where obesity is a big problem with our youth, substituting toys for candy can only be a good thing.

One last tip: If you do not want to eat the candy you buy for trick or treating, get a brand of candy you do not like. That way you won't be tempted!

Where to Buy Pumpkin Seeds for Halloween


Sure you can scoop out the messy goop from a pumpkin and go about seperating the seeds from the pumpkin muck. This can actually be quite fun. You cut the top off of the pumpkin and seperate the seed from the pulp as best as you can. You then put the seeds in a sieve or colendar and rinse them to seperate more pulp.

You can then boil the seeds in salted water for about 20 minutes to get rid of any lingering pulp and also to impart a slightly salty taste to the inside instead of just salting the outsides. This creates more flavor.

Then you lay the seeds out on a roasting pan and let them dry overnight as seeds roast better once dry. Then next day you put the baking tray with the spread out seeds into the oven at 325 degress for about 20-30 minutes or until they start to brown. Don't overcook them! It is better to slightly undercook them so they retain more nutrients and flavor. You can then sprinkle them to taste with salt, margarine, butter, garlic salt or your favorite seasoning.

Or you can just buy pumpkin seeds for Halloween and Thanksgiving online that are already roasted to perfection, or even unroasted raw Pumpkin seeds that contain more of the beneficial nutrients including calcium, potassium, iron, Vitamins B,C,D,K and a whole host more immunity building and depression reducing nutrients.

Halloween Ideas for Kids


Fall is here and Halloween is just around the corner. Time to pull out all the plastic pumpkins, hang up the black streamers and take out the ghost shaped muffin tins.

Want to get in shape? Running is one of the best cardiovascular workouts around – it is effective, efficient and fun.

Running is an aerobic exercise, so it helps strengthen your entire cardiovascular system – heart, lungs, blood vessels, etc. Regular exercise can make you feel better about yourself, provide some ‘me time’, trim your body, lower your cholesterol and help you sleep.

Running is relatively inexpensive – all you need is a good pair of running shoes and a program to follow. If you need extra incentive to keep you going, get a partner to start with you, or keep a chart to note your progress. For more fitness ideas check out the Parents Fitness Pages

Before you start any exercise program, check with your doctor. If you are very overweight, have heart problems or other physical concerns, brisk walking may be a better option for you. Start your program off slowly and listen to your body. Stop immediately if you get out of breath or dizzy. When you first start out, you may feel some mild muscle soreness in the days following your workout.

You should try to find level surfaces where there is some give – like dirt tracks or asphalt – instead of solid concrete sidewalks. If you live near walking trails or the beach, you could take advantage of getting back to nature as you are getting fit. Just make sure you run in a safe area or join a group. Bring water with you for your run. You may also want to bring your cell phone for emergencies.

Determine how many times a week you will run and set aside the time. You may
start with 3 times per week, and work your way up to 5 times. Experiment with
different clothes – sweat pants, shorts, yoga pants, etc., to see what is most
comfortable. Don’t take strides that are too big as that will put stress on your
joints. Bring along an ipod with your favourite tunes to keep you motivated and
make the time go quicker. Gradually increase your pace over time, still staying
in your heart rate zone.



Follow the following chart and check off the weeks as you progress. Don’t increase your mileage by more than 10% per week. Let your body adjust to your new routine and avoid pain or over-doing it. Always take time to warm up before the run. You should finish your run with a slow, easy pace for the last five minutes. Once you finish, let your body cool down by doing some stretches. If you are not familiar with proper running technique or stretching, look into taking a course or a training session at a local gym, recreation centre or even a store that caters to runners.

Keep progressing gradually till you can run/jog for the whole 20 minutes, then slowly increase the time you run. Good luck!

How to do the steps to Hoedown Throwdown Dance


The new Hannah Montana Movie has this dance called the Hoedown Throwdown that everyone is getting into. Very creative moves that make this a fun line dance for larger groups as well.
This video breaks the moves down to manageable pieces and the girls do a great job explaining all of these dance moves.

Love the dance aspect because it is really great exercise and great fun at the same time. No boring gym routines necessary to stay fit when you dance!
